Ingredients
Soufflé Base
4 large eggs (separated)
1/2 cup whole milk
2 tbsp unsalted butter (+ extra for greasing)
2 tbsp all-purpose flour
1/2 tsp Dijon mustard
1/2 cup grated Gruyère cheese
1/4 cup grated Parmigiano-Reggiano
1/2 tsp fine salt
1/4 tsp white pepper
1/4 tsp nutmeg (freshly grated)
1/2 tsp lemon zest
1/2 tsp chopped chives
1/2 tsp fresh thyme
Egg Whites Stabilizer
1/4 tsp cream of tartar
Ramekin Coating
1 tbsp finely grated Parmigiano-Reggiano
Instructions
1. Prepare the Oven & Ramekins
Heat oven to 400°F (200°C) and place the rack in the lower section.
Grease four 8-ounce ramekins thoroughly with butter. Dust each with grated Parmigiano-Reggiano, rotate to coat evenly, then shake out excess.
2. Separate Eggs
Carefully separate yolks and whites into two clean bowls. Ensure no yolk mixes with the whites for best whipping results.
3. Make the Base Sauce
Melt butter in a saucepan over medium heat. Stir in flour and cook for about 1 minute until bubbling gently.
Slowly whisk in milk and cook until thickened and smooth (about 2 minutes).
Remove from heat and mix in salt, mustard, pepper, nutmeg, lemon zest, chives, and thyme.
Add egg yolks one at a time, mixing well. Stir in both cheeses until melted and smooth. Allow to cool slightly.
4. Whip Egg Whites
Add cream of tartar to egg whites. Beat with an electric mixer until soft peaks form, then continue until stiff, glossy peaks appear.
5. Fold Mixtures Together
Gently fold one-third of the egg whites into the base to lighten it. Then carefully fold in the rest in two additions, preserving airiness.
6. Fill Ramekins
Spoon mixture evenly into ramekins, filling to the top. Smooth the surface and run a finger around the inside rim to help even rising.
7. Bake
Place ramekins on a baking tray. Lower oven temperature to 375°F (190°C) immediately after placing them inside.
Bake for 18–22 minutes until puffed, golden, and slightly wobbly in the center.
8. Serve Immediately
Soufflés deflate quickly, so serve right away for the best texture and presentation.
Expert Tips
Make sure ramekins are well coated so the soufflé climbs properly
Don’t skip the egg white whipping stage—it creates the lift
Fold gently to avoid deflating air bubbles
Serve straight from the oven for maximum height
Common Variations
Add spinach or mushrooms for a savory twist
Use cheddar instead of Gruyère for a stronger flavor
Add herbs like basil or dill for freshness
Try a sweet version by replacing cheese with chocolate or citrus
Storage Advice
Soufflés are best enjoyed fresh. They do not store well after baking because they lose volume quickly. However, the base mixture can be prepared a few hours ahead and refrigerated before folding in egg whites.
Serving Ideas
Pair this soufflé with:
Light green salad
Roasted vegetables
Sparkling wine or chilled herbal tea
Fruit compote for contrast

Once you get comfortable with the method, it quickly becomes a show-stopping recipe you’ll return to again and again.
